Ingredients

For the Glaze

  • 1/2 cup ketchup
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon molasses

For the Stuffing

  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup shredded parmesan cheese
  • 1/2 cup shredded smoked gouda cheese
  • 1 egg yolk
  • 1/2 teaspoon Italian seasoning

For the Meatloaf

  • 1 ½ lbs ground beef
  • 1/2 pound ground pork sausage
  • 1/2 cup rolled oats
  • 1/3 cup heavy whipping cream
  • 2 shallots, minced
  • 4 cloves garlic, minced
  • 1 egg white
  • 3 tablespoons chopped fresh basil
  • 3 tablespoons chopped fresh parsley, plus extra for topping
  • 2 teaspoons dried ground mustard
  • 1 teaspoon salt
  • 1/2 teaspoon ground black pepper
  • pinch white pepper
  • 1/4 teaspoon red pepper flakes


Instructions

  1. Prepare the glaze: Whisk together ketchup, apple cider vinegar, and molasses in a small bowl until smooth. Set aside to use later.
  2. Make the stuffing: In a medium bowl, combine shredded mozzarella, parmesan, smoked gouda, egg yolk, and Italian seasoning. Mix thoroughly and set aside.
  3. Combine meatloaf ingredients: In a large bowl, gently combine ground beef, ground pork sausage, rolled oats, heavy whipping cream, minced shallots, minced garlic, egg white, chopped fresh basil, parsley, dried mustard, salt, black pepper, white pepper, and red pepper flakes. Mix until just combined to avoid overmixing, which can make the meatloaf dense.
  4. Assemble the meatloaf: Press half of the meat mixture evenly into an 8” x 5” loaf baking pan. Layer the prepared cheese stuffing evenly over the meat, ensuring it covers the surface without spilling over. Carefully cover with the remaining half of the meat mixture, sealing the cheese completely inside.
  5. Apply the first glaze coat and bake: Brush the top of the assembled meatloaf with half of the prepared glaze. Place in the preheated oven at 400˚F and bake for 45 minutes.
  6. Glaze again and finish baking: Remove the meatloaf from the oven and brush with the remaining glaze. Return to the oven and bake for an additional 10-15 minutes, or until the internal temperature of the meatloaf reaches 160˚F, ensuring it is cooked through.
  7. Garnish and serve: Once baked, sprinkle freshly chopped parsley over the meatloaf for a fresh finishing touch. Slice into 8 servings and serve warm for a satisfying meal.
