This refreshing 3-layer fruit smoothie is a perfect healthy treat for Valentine's Day or any breakfast. It features three delicious smoothie layers: a chocolate almond butter base, a creamy banana vanilla middle, and a vibrant red berry top, all made with wholesome ingredients like almond milk, bananas, Medjool dates, and berries. Naturally sweetened and visually stunning, this smoothie is both filling and nutritious.
Ingredients
Bottom Layer: Chocolate Almond Butter
- ½ cup Almond Breeze almondmilk Vanilla
- ¼ cup plus 2 tablespoons almond butter
- ½ frozen banana
- 1 tablespoon cocoa powder
- 2 soft Medjool dates, pitted
- handful of ice
Middle Layer: Banana Vanilla
- 1 cup Almond Breeze almondmilk Vanilla
- 1½ frozen bananas
- 2 soft Medjool dates, pitted
- 1 teaspoon pure vanilla extract or 1 scraped vanilla bean
- handful of ice
Top Layer: Red Berry
- 1 cup frozen strawberries
- 1 cup frozen raspberries
- 1 cup Almond Breeze almondmilk Vanilla
- Chocolate chips for garnish, optional
Instructions
- Make the bottom layer: Combine the almond milk, almond butter, frozen banana, cocoa powder, and pitted dates in a blender. Blend until smooth and the dates are fully pureed. Add a handful of ice and pulse a few times to incorporate the ice without fully pulverizing it. Pour this mixture evenly into 3 glasses (or 4 smaller glasses). Place the glasses in the freezer for 30 minutes to slightly firm up the layer.
- Make the middle layer: In the blender, combine almond milk, frozen bananas, pitted dates, and vanilla extract or scraped vanilla bean. Blend until smooth and creamy. Add a handful of ice and pulse to combine. Carefully layer this mixture on top of the frozen bottom layer in each glass. Return the glasses to the freezer for another 30 minutes to allow this layer to set.
- Make the top layer: Blend the frozen strawberries, frozen raspberries, and almond milk until very smooth and thick. Remove the glasses from the freezer and gently spoon this thick red berry layer on top of each smoothie. Optionally, sprinkle chocolate chips on top as garnish.
- Serve and enjoy: The bottom two layers will thaw to a spoonable and drinkable consistency within 5 to 10 minutes after removing from the freezer. Serve immediately to enjoy the distinct layers and flavors of this beautiful smoothie.
