- Prepare the dry base: In a food processor, combine the sunflower seeds, 1 cup shredded coconut, cinnamon, and sea salt. Pulse until the mixture turns into a fine meal with a flour-like consistency, which will give the bliss balls their structure.
- Add the wet ingredients: Add the pitted dates and chopped carrots to the food processor. Pulse until the mixture comes together and is sticky enough to hold shape. Taste the mixture; if you prefer it sweeter, add more maple syrup gradually and pulse again. Adjust texture by adding more coconut if too moist or chilling in the fridge for 20 minutes if needed.
- Shape the bliss balls: Use a tablespoon to scoop out the mixture, then roll each portion between your palms to form approximately 1-inch diameter balls. This size makes them perfect bite-sized snacks.
- Coat with coconut: Roll each formed ball in the reserved ⅓ cup shredded coconut to coat the outside, which adds a pleasant texture and extra coconut flavor.
