Instructions

  1. Prep the Oven and Pan: Preheat your oven to 350°F (175°C) and grease an 8x8-inch baking pan. For easier removal, also line the pan with parchment paper.
  2. Mix Wet Ingredients: In a large bowl, whisk together the applesauce, sugar, avocado oil, almond milk, eggs, vanilla extract, and apple cider vinegar until the mixture is smooth and well combined.
  3. Combine Dry Ingredients: In a separate medium bowl, whisk together all-purpose flour, whole wheat flour, almond flour, apple pie spice, baking powder, sea salt, and baking soda ensuring they are evenly mixed.
  4. Make the Batter: Add the dry ingredient mixture to the wet ingredients and stir gently until just combined to avoid overmixing. Then fold in the chopped walnuts.
  5. Bake the Cake: Pour the batter into the prepared baking pan and smooth the top. Bake in the preheated oven for 32 to 39 minutes. Test doneness by inserting a toothpick in the center; it should come out clean.
