Description

This Avocado Lemon Loaf is a moist, flavorful cake that combines creamy ripe avocado with vibrant citrusy notes from lemon and orange zest. Lightly sweetened and topped with a crunchy Demerara sugar crust, it's a perfect low-lactose treat for breakfast or dessert.

Ingredients

Wet Ingredients

  • 2 ripe avocados, cubed
  • 3 eggs
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1 teaspoon almond extract
  • 1 lemon, zested and juiced

Dry Ingredients

  • 2 1/4 cups all-purpose flour
  • 2 teaspoons baking powder
  • ¼ teaspoon kosher salt
  • 1 orange, zested
  • 1 tablespoon poppyseeds

Topping

  • Demerara sugar, for topping

Instructions

  1. Preheat and Prepare Pan: Preheat your oven to 350º F (175º C). Line a loaf pan with parchment paper and lightly spray it with cooking spray to prevent sticking.
  2. Mix Wet Ingredients: In a stand mixer, combine the cubed ripe avocados, eggs, granulated sugar, vanilla extract, almond extract, and freshly squeezed lemon juice. Beat the mixture until smooth and creamy.
  3. Combine Dry Ingredients: In a separate bowl, sift together the all-purpose flour, baking powder, and kosher salt to ensure even distribution and a light texture.
  4. Fold Dry into Wet Mixture: Transfer the smooth avocado mixture into a mixing bowl, then gently fold in the sifted dry ingredients along with the lemon zest, orange zest, and poppyseeds. Mix until just combined to keep the loaf tender.
  5. Prepare for Baking: Pour the batter into the prepared loaf pan. Evenly sprinkle the top with Demerara sugar to create a crunchy, caramelized crust during baking.
  6. Bake: Place the loaf in the preheated oven and bake for 50 to 55 minutes, or until the top is golden and a toothpick inserted into the center comes out clean.
  7. Cool: Allow the loaf to rest in the pan for 5 minutes before transferring it to a wire rack to cool completely. This helps the loaf set and prevents it from breaking apart.

Notes

  • The loaf can be stored in an airtight container at room temperature for up to 2 days or refrigerated for up to 5 days.
  • For an extra citrusy flavor, feel free to add more lemon zest or juice to the batter.
  • You can substitute gluten-free flour blend for all-purpose flour to make the loaf gluten-free.
  • The almonds extract adds a subtle nutty aroma; if unavailable, you may omit or replace with more vanilla extract.
  • Ensure the avocados are very ripe to achieve a creamy texture and natural sweetness.
