Instructions

  1. Prepare the Filling: In a medium bowl, combine the shredded chicken, shredded cheddar cheese, chopped cilantro, ground cumin, chili powder, garlic powder, salt, and pepper. Mix well to evenly distribute the seasonings.
  2. Warm the Tortillas: Lightly warm the corn tortillas in a dry skillet for a few seconds on each side or wrap them in a damp towel and microwave for 30 seconds until pliable. This prevents cracking when rolling.
  3. Roll the Flautas: Place about 2 tablespoons of the chicken filling along the center of each tortilla. Tightly roll up the tortilla around the filling, tucking in the sides slightly to enclose the filling fully.
  4. Arrange on Baking Sheet: Place the rolled flautas seam side down on a baking sheet lined with parchment paper. Brush or spray them with olive oil evenly to encourage browning and crispiness.
  5. Bake the Flautas: Preheat the oven to 425°F (220°C). Bake the flautas for 15 to 20 minutes or until they are golden brown and crispy, flipping halfway through to ensure even baking.
