Ingredients
Maple Balsamic Brussels Sprouts
- 1 pound Brussels sprouts, sliced in half
- 1 small red onion, sliced into wedges
- Extra-virgin olive oil, for drizzling
- 1 1/2 tablespoons balsamic vinegar
- 1 teaspoon maple syrup
For Serving
- 2 cups cooked farro
- 1 tablespoon extra-virgin olive oil
- 2 tablespoons fresh lemon juice, more to taste
- ½ teaspoon Dijon mustard
- ⅓ cup toasted pecans
- ⅓ cup dried cranberries
- Handful of microgreens, optional
- Sea salt and freshly ground black pepper, to taste
Instructions
- Roast the Brussels Sprouts: Preheat your oven to 425°F (220°C) and line a large sheet pan with parchment paper. Spread the halved Brussels sprouts and red onion wedges evenly on the baking sheet. Drizzle with extra-virgin olive oil, balsamic vinegar, and maple syrup. Season generously with sea salt and freshly ground black pepper. Toss everything together to ensure the vegetables are well coated. Roast in the oven for 30 to 40 minutes, or until the Brussels sprouts are tender and browned around the edges.
- Prepare the Farro Dressing: While the Brussels sprouts roast, combine 1 tablespoon of extra-virgin olive oil, fresh lemon juice, Dijon mustard, and a pinch of salt and pepper in a large mixing bowl. Stir well to create a tangy dressing.
- Assemble the Dish: Add the cooked farro to the bowl with the dressing and toss to coat evenly. Once the Brussels sprouts and onions are done roasting, add them to the farro along with the toasted pecans and dried cranberries. Toss all ingredients gently to combine and adjust seasoning with additional salt, pepper, and lemon juice to taste.
- Serve: Transfer to serving dishes and garnish with a handful of microgreens if desired. Serve warm and enjoy this hearty, flavorful vegetable side dish.

- For a vegan version, ensure the maple syrup and other ingredients used conform to your dietary preferences.
