Ingredients
Beef and Mushrooms
- 4 Tablespoons salted butter, divided
- 1 ½ pounds steak, thinly sliced
- Kosher salt, to taste
- Ground black pepper, to taste
- 8 ounces cremini mushrooms, sliced
Sauce
- 1 ½ cups beef broth or stock
- 2 Tablespoons Worcestershire sauce
- 1 ounce onion soup mix
- 3 Tablespoons all-purpose flour
- ½ cup sour cream
For Serving
- Cooked butter noodles or mashed potatoes
- Fresh parsley, for garnish
Instructions
- Sear steak. In a large skillet, melt 2 tablespoons of butter over medium-high heat. Add the thinly sliced steak in a single layer, seasoning with kosher salt and ground black pepper. Sauté undisturbed for 3 minutes until browned on one side. Flip the steak strips using tongs and continue cooking for another 2 to 3 minutes until browned on the other side. Remove the steak from the skillet and set aside on a plate.
- Sauté mushrooms. In the same skillet, melt the remaining 2 tablespoons of butter over medium heat. Add the sliced cremini mushrooms and sauté for 5 to 7 minutes until softened and golden brown, stirring occasionally to ensure even cooking.
- Whisk sauce. In a medium bowl, combine the beef broth, Worcestershire sauce, onion soup mix, and all-purpose flour. Whisk the ingredients together thoroughly until the mixture is smooth and well combined with no lumps.
- Prepare Stroganoff sauce. Pour the whisked broth mixture into the skillet with the mushrooms. Bring it to a boil, then reduce the heat to medium-low and simmer for 5 minutes, stirring occasionally, until the sauce thickens to a gravy consistency.
- Finish the sauce. Stir in the sour cream until fully incorporated into the sauce. Return the seared steak strips to the skillet, mixing gently to coat the meat with the sauce. Taste and adjust seasoning with salt and pepper if needed.
- Serve. Spoon the beef stroganoff over cooked buttered noodles or mashed potatoes. Garnish with fresh parsley if desired and serve immediately for a warm, comforting meal.
Notes
- Use tender cuts like sirloin or ribeye for the best texture in the steak.
- Make sure to sauté the mushrooms thoroughly to develop flavor and color.
- For a thicker gravy, let the sauce simmer a bit longer or add a little more flour dissolved in broth.
- Sour cream should be added off the direct heat to prevent curdling.
- Butter noodles or mashed potatoes work wonderfully as a base to soak up the rich sauce.
