Instructions

  1. Use a potato masher to mash the mixture until it holds together but still has some visible chunks of black beans for texture.
  2. Add Egg and Panko: Add the large egg to the mixture and fold with a spatula until combined. Then, fold in the panko bread crumbs to help bind the mixture.
  3. Form Patties: With clean hands, shape the mixture into six evenly sized patties. The mixture should be cohesive and slightly wet. If it feels too wet to handle, chill the mixture for 20 minutes or mash the beans a bit more until it firms up.
  4. Cook on Stovetop: Heat a cast-iron skillet over medium heat and brush lightly with extra-virgin olive oil. Cook the patties for approximately 5 minutes per side, adjusting the heat as needed, until both sides are well-charred and cooked through.
