Ingredients

Roasted Sweet Potatoes

  • 1 large sweet potato, cubed
  • Extra-virgin olive oil, for drizzling
  • Sea salt, to taste
  • Freshly ground black pepper, to taste

Fresh Vegetables

  • 1 watermelon radish or 2 red radishes
  • 2 medium carrots
  • 1 cup shredded red cabbage
  • Lemon wedge, for squeezing
  • 8 kale leaves, chopped

Grains & Protein

  • 2 cups cooked brown rice or quinoa
  • 1 cup cooked chickpeas or cooked lentils

Other Components

  • ¾ cup sauerkraut or other fermented vegetable
  • 2 tablespoons sesame seeds or hemp seeds
  • Microgreens, optional
  • Turmeric Tahini Sauce, for serving


Instructions

  1. Preheat Oven and Roast Sweet Potatoes: Preheat your oven to 400°F (200°C) and line a large baking sheet with parchment paper. Toss the cubed sweet potatoes with a drizzle of extra-virgin olive oil, sea salt, and freshly ground black pepper. Spread them evenly on the baking sheet and roast for about 20 minutes or until they turn golden brown and tender.
  2. Prepare Fresh Veggies: Thinly slice the radish into rounds using a mandoline slicer for uniform thinness. Use a vegetable peeler to create ribbons from the carrots. Toss the radish slices, carrot ribbons, and shredded red cabbage together with a squeeze of lemon juice and set aside to marinate lightly.
  3. Massage the Kale: Place the chopped kale leaves into a large bowl. Add a squeeze of lemon and a few pinches of sea salt. Massage the leaves gently with your hands until they soften and wilt, reducing in volume by about half. This helps make the kale tender and easier to digest.
  4. Assemble the Buddha Bowls: In individual bowls, layer the cooked brown rice or quinoa, cooked chickpeas or lentils, massaged kale, carrot and radish mixture, roasted sweet potatoes, and sauerkraut. Sprinkle with sesame or hemp seeds and add microgreens if using for an extra fresh touch.
  5. Season and Serve: Season the assembled bowls with additional salt and freshly ground black pepper to taste. Drizzle with Turmeric Tahini Sauce and serve immediately for a nutritious and satisfying meal.
