Description

Delightful Blueberry Truffles combining fresh blueberries, Cocoa Puffs, and rich dark chocolate. These low-calorie treats are coated in velvety dark chocolate, drizzled with white chocolate, and perfect for a sweet snack or dessert. Made easily in a slow cooker, they offer a unique twist on traditional truffles with a fruity burst and crunchy texture.

Ingredients

Chocolate Coating

  • 6 oz. dark chocolate, chopped
  • 0.5 oz. Gulf wax

Main Ingredients

  • 2 pints fresh blueberries
  • 2 cups Cocoa Puffs

Drizzle

  • 1/4 cup white chocolate, for drizzling

Other

  • Ziploc bag, for drizzling the white chocolate

Instructions

  1. Melt Chocolate: Place the dark chocolate and Gulf wax in a slow cooker. Heat gently, stirring occasionally until the chocolate is fully melted and smooth, ensuring no burning.
  2. Mix Ingredients: Fold fresh blueberries and Cocoa Puffs into the melted chocolate inside the slow cooker, making sure they are completely coated with the chocolate mixture.
  3. Form Truffles: Using a tablespoon, scoop the chocolate-coated mixture and place dollops onto a parchment-lined sheet tray to create individual truffle mounds.
  4. Cool Truffles: Allow the truffles to cool completely either at room temperature or in the refrigerator until set firmly.
  5. Melt White Chocolate: Melt the white chocolate in the microwave until smooth. Transfer the melted white chocolate into a Ziploc bag and cut a small corner for drizzling.
  6. Drizzle and Set: Drizzle the white chocolate over the cooled truffles, then let them set completely. Store the truffles in an airtight container in the refrigerator or freezer for snacking.

Notes

  • For a firmer texture, chill the truffles in the refrigerator before serving.
  • Be careful when melting chocolate to avoid overheating and burning.
  • Gulf wax helps stabilize the chocolate coating to keep it smooth and glossy.
  • Store truffles in an airtight container to maintain freshness and prevent moisture absorption.
  • If preferred, the white chocolate drizzle can be substituted with dark chocolate or omitted.
