Ingredients
Dry Ingredients
- 1½ cups all-purpose flour
- 2 tablespoons cane sugar
- 2 teaspoons baking powder
- ½ teaspoon baking soda
- ½ teaspoon cinnamon
- Heaping ¼ teaspoon sea salt
Wet Ingredients
- 1 large egg
- 1 cup plus 3 tablespoons milk
- ½ cup plain whole milk Greek yogurt
- 2 tablespoons avocado oil or melted butter, plus more for brushing
- 1½ teaspoons vanilla extract

- 2 cups blueberries, fresh or thawed frozen

Instructions
- Combine dry ingredients: In a large bowl, mix together the all-purpose flour, cane sugar, baking powder, baking soda, cinnamon, and sea salt until well combined.
- Prepare wet ingredients: In a medium bowl, whisk the egg, milk, Greek yogurt, avocado oil (or melted butter), and vanilla extract until smooth and well blended.
- Mix wet and dry components: Pour the wet ingredients into the dry ingredients and stir gently until just combined; avoid overmixing. If using fresh blueberries, fold them carefully into the batter now.
- Heat skillet and cook pancakes: Warm a nonstick skillet over medium-low heat and lightly brush with oil. Using a ⅓-cup scoop, pour batter onto the skillet. If using frozen blueberries, scatter them evenly on top of each pancake immediately after pouring the batter.
- Cook until bubbles form: Cook each pancake for 1 to 2 minutes, until bubbles appear on the surface and edges start to set.
- Flip and finish cooking: Flip the pancakes and cook for another 1 to 2 minutes until puffed and golden brown on both sides.
- Serve and enjoy: Serve pancakes warm with maple syrup and optional butter or yogurt and additional blueberries on top.
Notes
- Use fresh blueberries for folding into the batter and frozen blueberries for scattering on top while cooking to avoid staining the batter.
- To keep pancakes warm while cooking the rest, place them on a baking sheet in a low oven (around 200°F) until all are ready.
- If you prefer a thinner batter, add a little more milk, one tablespoon at a time.
