Description

This Broccoli Cheese Casserole features tender broccoli mixed into a creamy cheese sauce, topped with a buttery Ritz cracker crumb topping. It’s an easy-to-make, comforting side dish perfect for family dinners and potlucks.

Ingredients

Main Ingredients

  • 30 ounces frozen broccoli, thawed and drained
  • 1 egg
  • 10.5 ounces cream of mushroom soup (one can)
  • ½ cup mayonnaise
  • ½ teaspoon pepper
  • 1 teaspoon garlic powder
  • ½ teaspoon onion powder
  • 2 cups grated cheddar cheese

Topping

  • 1 ½ cups crushed butter crackers (such as Ritz)
  • ¼ cup melted butter

Instructions

  1. Prepare oven and dish: Preheat the oven to 350°F (175°C). Coat a 9×13 inch baking dish with non-stick cooking spray to prevent sticking and make cleanup easier.
  2. Make sauce: In a large mixing bowl, whisk together the egg, cream of mushroom soup, and mayonnaise. Add pepper, garlic powder, and onion powder for seasoning. Stir until smooth. Then mix in the shredded cheddar cheese until evenly combined to create a creamy cheesy sauce.
  3. Add broccoli: Fold in the thawed and well-drained broccoli florets into the cheese sauce until all pieces are fully coated in the mixture.
  4. Make the crumb topping: In a small bowl, combine the crushed butter crackers with the melted butter. Stir until all crumbs are moistened and mixture is uniform.
  5. Add to the pan: Pour the broccoli and cheese mixture evenly into the prepared baking dish. Sprinkle the buttery cracker crumbs evenly over the top as a crunchy topping.
  6. Bake: Place the dish in the preheated oven and bake for 35 to 40 minutes, or until the casserole is bubbly and the topping is golden brown and crisp.

Notes

  • Storage: Store leftover casserole in an airtight container in the refrigerator for up to 3 days.
  • You can substitute cream of mushroom soup with cream of chicken soup if preferred.
  • For extra crunch, add chopped nuts mixed with the cracker topping.
  • Allow casserole to cool slightly before serving for best texture.
