Ingredients
Vegetables
- 3 cups julienned broccoli stems (from 1 very large or 2 medium heads of broccoli)
- 2 cups small broccoli florets
- 1 cup julienned carrots
- 1 cup sliced red cabbage
- ¼ cup thinly sliced red onion
Additional Ingredients
- ½ cup toasted sliced almonds, plus extra for garnish
- ⅓ cup dried cranberries, plus extra for garnish
- 1 recipe Coleslaw Dressing (omit celery seed)
Instructions
- Prepare Vegetables: Rinse and julienne the broccoli stems, slice the broccoli florets, julienne the carrots, slice the red cabbage and thinly slice the red onion to create the base of the slaw.
- Combine Ingredients: In a large mixing bowl, combine the broccoli stems, broccoli florets, carrots, red cabbage, red onion, toasted sliced almonds, and dried cranberries evenly.
- Add Dressing: Drizzle about three-quarters of the coleslaw dressing over the mixture and toss thoroughly to coat all ingredients. Add more dressing to taste if needed.
- Garnish and Serve: Garnish the slaw with the reserved toasted almonds and dried cranberries, then serve immediately or chill until ready to serve.
Notes
- For best texture, use fresh broccoli and slice the stems thinly to match the julienned style for better bite.
- You can toast almonds yourself for more flavor by lightly warming them in a dry pan over medium heat until golden and fragrant.
- The coleslaw dressing should be made fresh and celery seed omitted as per the recipe instructions.
- This slaw is best served chilled but can be kept in the refrigerator up to 2 days.
- Feel free to substitute dried cranberries with raisins or chopped dried apricots if desired.
