Instructions

  1. Prepare the tamari sauce mixture: In a small bowl, thoroughly mix together the rice vinegar, tamari, and toasted sesame oil. Set this flavorful sauce aside for later use.
  2. Cook the vegetables: Heat the avocado oil in a large nonstick skillet over medium heat. Add the sliced shiitake mushrooms, diced carrot, and sea salt. Sauté, stirring occasionally, for about 8 minutes until the vegetables soften and develop flavor.
  3. Incorporate aromatics and kimchi: Add the chopped garlic, fresh ginger, and chopped kimchi to the skillet. Stir well to combine these bold ingredients with the cooked vegetables.
  4. Add cauliflower rice and scallions: Mix in the riced cauliflower and chopped scallions, stirring everything together evenly within the skillet.
  5. Cook the eggs: Create a well in the center of the pan and pour the beaten eggs into it. Stir gently to scramble the eggs, then fold them into the vegetable mixture to integrate well.
