Cheesecake Filling
- 8 ounces cream cheese, softened (1 package)
- ½ cup powdered sugar
- 1 teaspoon vanilla extract
- 1-2 tablespoons heavy cream
Strawberries
- 1 pint fresh strawberries, stems and cores removed
Topping
- 3 graham crackers, crushed
Instructions
- Prep strawberries: Rinse strawberries under cold water and gently pat dry with a towel. Twist off each strawberry stem, then carefully remove the core from the center using a Wilton 1A piping tip by inserting it into the top, twisting, and pulling out the core. Alternatively, use a paring knife to hollow out the centers without cutting through the bottom.
- Make cheesecake filling: In a medium mixing bowl, beat the softened cream cheese with an electric hand mixer until smooth. Add the powdered sugar, vanilla extract, and 1 tablespoon of heavy cream. Continue mixing until the filling is creamy and well combined. If the mixture is too thick, add the remaining tablespoon of heavy cream to reach the desired consistency.
- Prepare piping bag: Spoon the cheesecake filling into a piping bag or a resealable plastic bag. Snip off a small corner of the bag to create an opening for piping.
- Fill strawberries: Pipe the cheesecake filling into the hollowed centers of each strawberry, filling them generously but without overflowing.
- Add topping: Dip the filled tops of the strawberries into the crushed graham crackers to coat them lightly, adding an extra crunch and flavor contrast.
Notes
- The graham cracker crumbs can get soggy if dipped and refrigerated for a long time. For best texture, dip strawberries in crumbs just before serving.
