Ingredients

Vegetable Mix

  • 2 large zucchini, grated and squeezed
  • 1/2 cup yellow onion, grated and squeezed
  • 3 garlic cloves, minced
  • 3 tablespoons fresh basil, chopped

Cheese and Egg Mixture

  • 1 cup shredded mozzarella cheese, divided in half
  • 1/2 cup Parmesan cheese
  • 1 egg

Dry Ingredients

  • 2/3 cup panko breadcrumbs
  • 3 tablespoons cornmeal
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper

Finishing

  • 1/4 cup unsalted butter, melted


Instructions

  1. Preheat Oven and Prepare Tray: Preheat your oven to 425°F (220°C) and line a sheet tray with parchment paper. Lightly grease the parchment paper to prevent sticking.
  2. Squeeze Moisture from Vegetables: After grating the zucchini and onion, squeeze out as much moisture as possible. This step is crucial to prevent sogginess in the flatbread.
  3. Combine Ingredients: In a large mixing bowl, combine the squeezed zucchini and onion with the egg, half of the shredded mozzarella cheese, panko breadcrumbs, Parmesan cheese, cornmeal, chopped fresh basil, salt, and black pepper. Mix thoroughly until all ingredients are well incorporated.
  4. Form the Batter on Tray: Pour the mixture onto the prepared sheet tray and spread it evenly into a rectangular shape to ensure uniform cooking.
  5. Bake the Flatbread Base: Place the tray in the oven and bake for 20 to 22 minutes until the flatbread is firm and lightly golden. For a crisper base, extend baking time by an additional 6 to 8 minutes.
