Ingredients
Dry Ingredients
- 1½ cups all-purpose flour, spooned and leveled
- ½ cup almond flour, spooned and leveled
- 1 teaspoon baking powder
- 1 teaspoon sea salt
- ½ teaspoon baking soda
Wet Ingredients
- 1 packed cup brown sugar
- 2 large eggs
- ½ cup melted butter or melted coconut oil
- 2 teaspoons vanilla extract
Add-ins
- 1 heaping cup dark chocolate chips
- Flaky sea salt, for sprinkling
Instructions
- Preheat and Prepare Pan: Preheat your oven to 350°F (175°C) and grease an 8x8-inch baking dish. Line the pan with parchment paper on all sides to ensure easy removal of the cookie bars after baking.
- Mix Dry Ingredients: In a medium bowl, whisk together the all-purpose flour, almond flour, baking powder, sea salt, and baking soda to evenly distribute the leavening agents and salt throughout the flours.
- Combine Wet Ingredients: In a large bowl, whisk the brown sugar, eggs, melted butter (or coconut oil), and vanilla extract until smooth and well combined.
- Combine Wet and Dry Mixtures: Gradually add the dry ingredient mixture to the wet ingredients, stirring gently until just combined. The batter will be thick and dense.
- Fold in Chocolate Chips: Carefully fold the dark chocolate chips into the batter, ensuring they are evenly dispersed throughout the mixture without overmixing.
- Transfer and Spread Batter: Pour the batter into the prepared baking dish. Use a spatula to spread it out evenly, pushing the batter to the edges of the pan for even thickness.
- Add Finishing Touch: Sprinkle flaky sea salt on top of the batter to enhance the flavor contrast between sweet and salty.
- Bake: Bake in the preheated oven for 33 to 38 minutes or until the top is golden brown and a toothpick inserted in the center comes out mostly clean with a few moist crumbs.
- Cool and Serve: Remove the pan from the oven and allow the bars to cool completely in the pan for at least an hour to set. Once cooled, lift the bars out using the parchment paper edges and slice into 16 equal pieces to serve.
Notes
- You can substitute melted coconut oil for the butter to make the bars dairy-free.
- Ensure not to overbake to maintain a soft and chewy texture.
- Using parchment paper makes removal and slicing easier without sticking.
- Store leftover bars in an airtight container at room temperature for up to 3 days or refrigerate up to a week.
- For extra indulgence, add nuts like chopped walnuts or pecans along with the chocolate chips.
