Description

A deliciously unique twist on traditional focaccia bread, this Chocolate Chip Focaccia combines soft, fluffy focaccia with sweet pockets of chocolate chip cookie dough baked right on top. Perfect for dessert lovers seeking a fun and impressive bakery-style treat at home.

Ingredients

For Focaccia Bread

  • 1 1/3 cups warm water
  • 2 teaspoons honey
  • 2 1/2 teaspoons active dry yeast
  • 3 1/2 cups all purpose flour
  • 1/4 cup unsalted butter
  • 2 teaspoons kosher salt
  • 1/2 cup unsalted butter (for drizzling)

For Assembly

  • 1 lb store-bought cookie dough, softened
  • 2 tablespoons unsalted butter (for brushing)
  • 1 batch focaccia bread

Instructions

  1. Preheat Oven: Preheat your oven to 375°F and prepare a 9x13-inch baking pan by buttering it generously.
  2. Make Focaccia Dough: In a stand mixer fitted with a dough hook, combine warm water, honey, active dry yeast, flour, 1/4 cup unsalted butter, and kosher salt. Mix on medium-high speed for 6 to 7 minutes until the dough is smooth and elastic.
  3. First Proof: Remove the dough from the mixer and place it into a buttered mixing bowl. Cover with plastic wrap or a clean towel and let it rest for 30 minutes, or until doubled in size.
  4. Shape Dough: Transfer the risen dough to the buttered 9x13-inch pan. Stretch and press the dough so it fills the pan evenly.
  5. Add Cookie Dough: Tear the softened cookie dough into pieces and distribute them evenly on top of the focaccia dough in the pan. Cover the pan loosely with plastic wrap and let the dough proof again for 30 minutes.
  6. Prepare for Baking: Using your fingers, gently press into the focaccia dough to create dimples. Brush the entire top surface generously with 2 tablespoons of melted unsalted butter.
  7. Bake: Place the pan on the lower rack of your preheated oven and bake for 25 to 30 minutes. If the cookie dough browns too quickly, tent with aluminum foil to prevent burning. Check doneness by inserting a toothpick into the cookie dough areas; it should come out clean or with just a few moist crumbs.
  8. Finish and Serve: After baking, drizzle the focaccia with the reserved 1/2 cup of melted unsalted butter while still warm for extra richness. Allow to cool slightly before slicing and serving.

Notes

  • Using room temperature cookie dough allows it to spread and bake evenly on top of the focaccia.
  • Make sure to proof the dough twice: once after mixing and once after adding the cookie dough, for optimum texture.
  • You can substitute honey with sugar if preferred, but honey adds a nice subtle sweetness and helps with yeast activation.
  • If the cookie dough or focaccia browns unevenly, covering with foil in the last minutes helps prevent burning.
  • For best results, use a high-quality store-bought cookie dough with visible chocolate chips.
