Ingredients
Fruit
- 5 clementines, peeled and separated
- 2-3 large oranges, peeled and separated
- 2 apples, cored and thinly sliced
- Seeds of 1 large pomegranate
- 3 kiwis, peeled and sliced
Dressing
- 4 tablespoons honey
- Juice of 2 limes
- Juice of 1 lemon
- ½ teaspoon vanilla extract
- 1 tablespoon poppy seeds
Instructions
- Prepare the fruit: Peel and separate the clementines and oranges, core and thinly slice the apples, peel and slice the kiwis, and remove the seeds from the pomegranate. Add all prepared fruit to a large serving bowl.
- Make the dressing: In a small bowl or jar, combine the honey, lime juice, lemon juice, vanilla extract, and poppy seeds. Stir or shake well until all ingredients are thoroughly mixed.
- Combine salad and dressing: Pour the dressing over the fruit in the large bowl. Gently toss everything together to coat the fruit evenly without bruising it.
- Serve and garnish: Sprinkle additional poppy seeds on top if desired for extra texture and presentation. Serve immediately or chill briefly before serving.
Notes
- This salad is best enjoyed fresh to maintain the vibrant texture of the fruit.
- For a vegan option, substitute honey with maple syrup or agave nectar.
- You can add chopped fresh mint leaves for a refreshing twist.
- Adjust the honey in the dressing based on your preferred sweetness.
- Make sure to peel the fruits carefully to avoid bitterness from the pith.
