Description

This vibrant Christmas Citrus Salad is a refreshing and colorful mix of seasonal fruits, dressed with a tangy honey-lime and lemon dressing infused with vanilla and poppy seeds. Perfect for holiday gatherings, it offers a bright combination of clementines, oranges, apples, pomegranate seeds, and kiwis, making it both visually appealing and full of fresh flavors.

Ingredients

Fruit

  • 5 clementines, peeled and separated
  • 2-3 large oranges, peeled and separated
  • 2 apples, cored and thinly sliced
  • Seeds of 1 large pomegranate
  • 3 kiwis, peeled and sliced

Dressing

  • 4 tablespoons honey
  • Juice of 2 limes
  • Juice of 1 lemon
  • ½ teaspoon vanilla extract
  • 1 tablespoon poppy seeds

Instructions

  1. Prepare the fruit: Peel and separate the clementines and oranges, core and thinly slice the apples, peel and slice the kiwis, and remove the seeds from the pomegranate. Add all prepared fruit to a large serving bowl.
  2. Make the dressing: In a small bowl or jar, combine the honey, lime juice, lemon juice, vanilla extract, and poppy seeds. Stir or shake well until all ingredients are thoroughly mixed.
  3. Combine salad and dressing: Pour the dressing over the fruit in the large bowl. Gently toss everything together to coat the fruit evenly without bruising it.
  4. Serve and garnish: Sprinkle additional poppy seeds on top if desired for extra texture and presentation. Serve immediately or chill briefly before serving.

Notes

  • This salad is best enjoyed fresh to maintain the vibrant texture of the fruit.
  • For a vegan option, substitute honey with maple syrup or agave nectar.
  • You can add chopped fresh mint leaves for a refreshing twist.
  • Adjust the honey in the dressing based on your preferred sweetness.
  • Make sure to peel the fruits carefully to avoid bitterness from the pith.
