Instructions

  1. Cook the rice: In a medium saucepan with a lid, combine the rinsed jasmine rice, water, and 1 teaspoon of extra-virgin olive oil. Bring the mixture to a boil over medium-high heat.
  2. Simmer: Once boiling, cover the saucepan and reduce the heat to low. Let the rice simmer gently for 20 minutes, or follow the cooking time specified on your rice package, until the water is absorbed and the rice is tender.
  3. Fluff and add aromatics: Uncover the pan and fluff the rice gently with a fork. Stir in the minced garlic, finely chopped scallions, and lime zest to evenly distribute these fresh flavors.
  4. Mix in remaining ingredients: Allow the rice to cool for one minute, then stir in the remaining 2 teaspoons of olive oil, sea salt (start with ¼ teaspoon and adjust to taste), fresh lime juice, chopped cilantro, and the optional red pepper flakes or diced jalapeño for a little heat.
