This Colonial Vegetable Pottage is a hearty, rustic vegetable stew inspired by traditional colonial-era cooking. - 1 cup carrots, peeled and diced

- 1 cup rolled oats
- 1 tablespoon vinegar
Instructions
- Sauté Initial Vegetables: In a large pot, add the diced carrots, onion, root vegetable (parsnip or turnip), and 1/4 cup of the stock. Cook over medium heat for about 10 minutes, allowing the vegetables to soften and develop flavor.
- Add More Vegetables and Herbs: Stir in the leek, cabbage, mushrooms, dried thyme, dried rosemary, and ground sage. Continue cooking for an additional 5 minutes to blend the flavors.
- Simmer with Stock and Bay Leaf: Pour in the remaining stock and add the bay leaf. Bring the mixture to a boil, then reduce the heat to a simmer. Cover partially and let it cook for 30 minutes to allow the vegetables to become tender and the flavors to meld.
- Incorporate Oats and Continue Cooking: Stir in the rolled oats and cook uncovered for another 20 minutes. The oats will thicken the pottage and add body to the stew.
- Finish and Season: Remove the bay leaf. Stir in the vinegar, and season with kosher salt and freshly cracked black pepper to taste. Adjust seasoning as needed.
- Serve: Ladle the pottage into bowls while hot and enjoy this comforting, nutritious dish.
