Ingredients
Pickling Brine
- 2 cups water
- 1 medium red or yellow beet, peeled and diced
- 1 cup apple cider vinegar
- ⅓ cup sugar
- 2 teaspoons sea salt, plus more for sprinkling
Eggs and Seasoning
- 6 hard boiled eggs, peeled
- Turmeric (optional, for yellow eggs)
- Freshly ground black pepper
Instructions
- Prepare the Beet Brine: Combine 1 cup of water and the diced beet in a small pot and bring to a simmer. Cook for 20 minutes or until the beet pieces are fork-tender, infusing the water with vibrant color and flavor.
- Add Remaining Ingredients to Brine: Add the remaining 1 cup of water, apple cider vinegar, sugar, and 2 teaspoons of sea salt to the pot. Simmer for 1 minute until the sugar dissolves completely, then remove from heat and let the brine cool to room temperature.
- Combine Eggs and Brine: Transfer the cooled brine to a large jar or two medium jars. If making yellow eggs, stir in a pinch of turmeric for added color. Fully submerge the peeled hard boiled eggs in the brine, adding 1-2 tablespoons additional water if necessary.
- Chill and Pickle: Cover the jar(s) and refrigerate. For best flavor and color, let the eggs pickle for at least 2-3 days. Eggs pickled for 12 hours will have a lighter pink, while those pickled longer develop a deeper color.
- Serve: When ready to eat, slice the pickled eggs in half and season with salt and freshly ground black pepper to taste. Enjoy as a snack or as a topping on dishes like avocado toast.
