Description

Learn how to make vibrant and healthy veggie noodles using a variety of fresh vegetables like carrots, zucchini, cucumber, and more. These veggie noodles offer a nutritious and colorful alternative to traditional pasta, perfect for light meals or as a base for your favorite sauces and toppings.

Ingredients

Vegetables for Making Noodles

  • Butternut squash - 1 medium (preferably with a long neck)
  • Beet - 1 large
  • English cucumber - 1 large
  • Carrot - 1 large, fat carrot
  • Daikon radish - 1 medium
  • Summer squash (yellow squash) - 1 large
  • Kohlrabi - 1 bulb with greens removed
  • Sweet potato - 1 thick
  • Zucchini - 1 large

Instructions

  1. Prepare Butternut Squash Noodles: Select a butternut squash with a long neck. Cut off and reserve the fatty, seedy base for other uses. Peel the squash with a vegetable peeler, then use a spiralizer to create noodles.
  2. Prepare Beet Noodles: Choose a large beet. Peel off the skin completely and spiralize to form noodles.
  3. Prepare Cucumber Noodles: Use a large English cucumber. Do not peel the cucumber. Utilize a spiralizer or julienne peeler to create noodles.
  4. Prepare Carrot Noodles: Pick a thick carrot. Scrub thoroughly or peel if needed. Use a spiralizer or julienne peeler to make noodles.
  5. Prepare Daikon Noodles: Take a medium daikon radish and spiralize into noodles.
  6. Prepare Summer Squash Noodles: Select a large yellow squash. Using a spiralizer, julienne peeler, or regular vegetable peeler, make noodles or ribbon-shaped noodles without peeling the skin.
  7. Prepare Kohlrabi Noodles: Remove the greens from the bulb and save for another use. Peel off any rough or nubby parts. Spiralize the bulb into noodles.
  8. Prepare Sweet Potato Noodles: Peel a thick sweet potato thoroughly and use a spiralizer to make noodles.
  9. Prepare Zucchini Noodles: Find a large zucchini. Use a spiralizer, julienne peeler, or vegetable peeler to form thick ribbon-shaped noodles. Peeling the skin is optional.

Notes

  • A spiralizer is the preferred tool for creating uniform veggie noodles, but julienne peelers or standard vegetable peelers can also be used.
  • Peeling is optional for some vegetables like cucumber, zucchini, and summer squash, depending on personal preference.
  • The base or greens discarded during prep can be saved and used in other recipes or for making stock.
  • Veggie noodles can be eaten raw or lightly sautéed depending on your dish preference.
  • Experiment with different vegetables or combine noodles for colorful, flavorful dishes.
