Description

Delightfully crispy and sweet, these Cornflake Marshmallow Treats combine toasted cornflakes with buttery, melted marshmallows for a nostalgic and satisfying snack. Perfectly toasted cornflakes add a nutty crunch balanced by the gooey marshmallow mixture, making them an irresistible treat for both kids and adults.

Ingredients

Dry Ingredients

  • 7 cups cornflakes, crushed slightly to the size of Rice Krispies
  • 1/2 teaspoon kosher salt
  • 1 (12-ounce) bag marshmallows, any size

Wet Ingredients

  • 8 tablespoons unsalted butter

Instructions

  1. Optional: Toast Cornflakes. Preheat your oven to 325°F (163°C) and line two baking sheets with parchment paper. Spread the crushed cornflakes evenly between the sheets. Toast in the oven, stirring and turning the cornflakes with a spatula frequently, until they are evenly browned, about 10 minutes. Remove and allow to cool on the pans for 5 minutes, then transfer to a large bowl.
  2. Prepare Baking Dish. Spray a 9x9 inch baking dish with non-stick cooking spray and line the bottom with parchment paper. Set aside.
  3. Melt Butter. In a large pot over low heat, melt the unsalted butter slowly. Continue cooking until the butter turns a light brown color and releases a fragrant, nutty aroma, about 4 to 6 minutes. This browning adds depth of flavor to your treats.
  4. Add Salt and Marshmallows. Stir in the kosher salt, then add the marshmallows. Use a rubber spatula to stir constantly until the marshmallows have completely melted and the mixture is smooth and glossy.
  5. Combine with Cornflakes. Immediately add the toasted cornflakes to the marshmallow mixture. Stir well to evenly coat all the cereal pieces with the sticky marshmallow mixture.
  6. Transfer to Baking Dish. Pour the mixture into the prepared baking dish. Using a rubber spatula lightly greased with non-stick spray, press and smooth the mixture evenly to create an even thickness.
  7. Cool and Serve. Allow the treats to cool and set at room temperature for approximately 30 minutes. Once firm, lift the parchment out of the dish, cut into 9 large or 12 small squares, and serve.

Notes

  • Toasting the cornflakes is optional but highly recommended for enhanced flavor and crunch.
  • Ensure butter is browned carefully on low heat to avoid burning and bitterness.
  • Use a rubber spatula greased with non-stick spray to prevent sticking when pressing the mixture into the pan.
  • These treats contain milk allergens due to butter and marshmallows.
  • Store leftovers in an airtight container at room temperature for up to 3 days for best freshness.
