Perfectly toasted cornflakes add a nutty crunch balanced by the gooey marshmallow mixture, making them an irresistible treat for both kids and adults.
Ingredients
Dry Ingredients
- 7 cups cornflakes, crushed slightly to the size of Rice Krispies
- 1/2 teaspoon kosher salt
- 1 (12-ounce) bag marshmallows, any size
Wet Ingredients
- 8 tablespoons unsalted butter
Instructions
- Optional: Toast Cornflakes. Preheat your oven to 325°F (163°C) and line two baking sheets with parchment paper. Spread the crushed cornflakes evenly between the sheets. Toast in the oven, stirring and turning the cornflakes with a spatula frequently, until they are evenly browned, about 10 minutes. Remove and allow to cool on the pans for 5 minutes, then transfer to a large bowl.
- Prepare Baking Dish. Spray a 9x9 inch baking dish with non-stick cooking spray and line the bottom with parchment paper. Set aside.
- Melt Butter. In a large pot over low heat, melt the unsalted butter slowly. Continue cooking until the butter turns a light brown color and releases a fragrant, nutty aroma, about 4 to 6 minutes. This browning adds depth of flavor to your treats.
- Add Salt and Marshmallows. Stir in the kosher salt, then add the marshmallows. Use a rubber spatula to stir constantly until the marshmallows have completely melted and the mixture is smooth and glossy.
- Combine with Cornflakes. Immediately add the toasted cornflakes to the marshmallow mixture. Stir well to evenly coat all the cereal pieces with the sticky marshmallow mixture.
- Transfer to Baking Dish. Pour the mixture into the prepared baking dish. Using a rubber spatula lightly greased with non-stick spray, press and smooth the mixture evenly to create an even thickness.
- Cool and Serve. Allow the treats to cool and set at room temperature for approximately 30 minutes. Once firm, lift the parchment out of the dish, cut into 9 large or 12 small squares, and serve.
Notes
- Toasting the cornflakes is optional but highly recommended for enhanced flavor and crunch.
