Mushroom Mixture

Creamy Base
- 1/2 cup whipping cream

Instructions
- Toast Bread: Preheat a cast iron pan over medium-high heat. Add the olive oil to the pan and toast the two slices of French bread until golden brown, about 1 minute per side. Remove the toasted bread and place it on a plate.
- Cook Mushrooms: In the same pan, add the unsalted butter and quartered baby bella mushrooms. Season the mushrooms with kosher salt and freshly cracked black pepper. Cook for 7 to 9 minutes, stirring occasionally, until the mushrooms are golden brown.
- Prepare Ricotta Mixture: While mushrooms are cooking, mix the ricotta cheese in a bowl with a pinch of salt and the juice of half a lemon. Stir to combine and set aside.
- Add Garlic: Add the pasted garlic cloves to the mushroom pan and sauté until fragrant, about 1 minute.
- Add Cream and Reduce: Pour the whipping cream into the pan with the mushrooms and reduce the mixture, stirring occasionally until the cream thickens and is mostly absorbed, turning a light golden color.
- Finish Mushrooms: Squeeze the remaining half of the lemon juice over the mushroom mixture and stir well to combine.
- Assemble Toast: Spread the lemon-ricotta mixture evenly over the toasted bread slices. Top each toast with the creamy sautéed mushroom mixture.
