Instructions
- Brown meat: Toss the beef chunks with salt and pepper. Heat vegetable oil in a large skillet over medium-high heat. Sear the beef in batches, cooking 2 minutes per side until nicely browned. This seals in the juices and adds rich flavor.
- Slow cook in crockpot: Transfer the browned beef to a lightly greased 6-quart crockpot. Top with chopped onion, minced garlic, and bay leaf. Pour in beef broth. Cover and cook on high for 3 to 4 hours or low for 5 to 7 hours until beef is tender. Season with additional salt and pepper to taste.
- Melt butter in skillet: Using the same skillet, melt the unsalted butter over medium heat. Include leftover meat juices and fat to make about ½ cup liquid combined. Whisk in the cornstarch and cook for 2 minutes, stirring constantly, to cook out the raw starch taste and create a roux.
- Make gravy: Gradually whisk in Dijon mustard, beef bouillon, parsley, paprika, oregano, and thyme to the roux. Slowly add 2 cups of the cooking liquid from the crockpot, whisking continuously to combine and prevent lumps. Bring to a light simmer and cook for 3 to 5 minutes until the gravy thickens. Adjust thickness by adding more or less liquid as desired.
- Serve: Spoon the tender beef tips onto plates and generously ladle the rich gravy over the top. Serve immediately for a satisfying comfort meal.
