Description

This Dutch Baby pancake is a light and airy baked treat that puffs up beautifully in a hot cast-iron skillet. With crisp, golden-brown edges and a soft, custardy center, it's an elegant and easy breakfast or brunch option. Serve warm with a dusting of powdered sugar and fresh berries for a perfect balance of sweet and tart flavors.

Ingredients

Batter Ingredients

  • 3 large eggs, at room temperature
  • ½ cup all-purpose flour, spooned and leveled
  • ½ cup whole milk, at room temperature
  • 2 tablespoons cane sugar
  • ¼ teaspoon sea salt
  • Pinch nutmeg

For Cooking and Serving

  • 2 tablespoons unsalted butter
  • Powdered sugar, for dusting
  • Fresh berries, for serving

Instructions

  1. Preheat the Oven: Preheat your oven to 425°F (220°C). Place a 10-inch cast-iron skillet inside the oven to heat for at least 5 minutes, ensuring it's very hot before adding the batter.
  2. Prepare the Batter: In a blender, combine the eggs, all-purpose flour, whole milk, cane sugar, sea salt, and nutmeg. Blend until the mixture is completely smooth and free of lumps.
  3. Cook the Dutch Baby: Carefully remove the hot skillet from the oven and add the unsalted butter. Swirl the butter around to fully coat the bottom and sides of the pan. Pour in the blended batter evenly. Return the skillet to the oven and bake for 13 to 16 minutes, or until the edges have puffed up, turned golden brown, and the center is set.
  4. Serve: Remove the skillet from the oven. Use a spatula to carefully lift the Dutch Baby from the pan and transfer it to a serving dish. Dust generously with powdered sugar and serve immediately with fresh berries on the side for a delicious finish.

Notes

  • Make sure the eggs and milk are at room temperature to help the pancake puff up better.
  • Use a well-seasoned cast-iron skillet for the best results and easy release.
  • Do not open the oven door while baking, as sudden temperature changes can cause the Dutch Baby to fall.
  • Serve immediately as the pancake will begin to deflate once out of the oven.
  • You can customize the toppings with lemon juice, syrups, or different fresh fruits depending on your preference.
