Description

This Door County Cherry Salsa is a vibrant and flavorful twist on traditional salsa, featuring roasted cherries combined with spicy jalapenos, fresh tomatoes, and zesty lime. Perfect as a dip or topping, this gluten-free salsa balances sweet, spicy, and tangy notes for a unique and delicious condiment.

Ingredients

Roasted Ingredients

  • 2 1/2 cups cherries, fresh or frozen
  • 2 jalapenos, stemmed and chopped
  • 4 Roma tomatoes, diced
  • 1 cup red onion, diced
  • 2 garlic cloves, smashed
  • 2 tablespoons vegetable oil
  • Kosher salt and black pepper, to taste

Finishing Ingredients

  • 2 tablespoons honey
  • 1/2 lime, juiced
  • 1/2 cup fresh cilantro

Instructions

  1. Preheat and Prepare: Preheat your oven to convection broil at 450 ºF and line a sheet tray with parchment paper to prevent sticking and ease cleanup.
  2. Toss and Roast: Combine the cherries, jalapenos, diced tomatoes, red onion, smashed garlic, and vegetable oil on the prepared sheet tray. Season generously with kosher salt and black pepper. Roast the mixture in the oven for 18 to 22 minutes, allowing the flavors to meld and ingredients to soften.
  3. Blend to Desired Consistency: After roasting, transfer the ingredients to a blender or food processor. Add the honey, freshly squeezed lime juice, and fresh cilantro. Pulse the mixture until you achieve your preferred salsa texture, whether chunky or smooth.
  4. Season and Serve: Taste the salsa and adjust seasoning with additional salt or pepper if needed. Serve immediately or chill for later use as a versatile dip or condiment.

Notes

  • This salsa is best served fresh but can be refrigerated in an airtight container for up to 5 days.
  • Adjust the amount of jalapenos to control the heat level according to your preference.
  • Using fresh cherries will offer a brighter flavor, but frozen cherries work well and contribute a nice sweetness.
  • For a smoky flavor, consider adding a small pinch of smoked paprika before blending.
