Ingredients

Sausage and Vegetables

  • ½ pound breakfast sausage
  • 3 teaspoons minced garlic
  • 2 cups frozen diced potatoes O'Brien (mixed with onions and peppers, no need to thaw)
  • 1 cup chopped spinach, roughly chopped

Egg Mixture

  • 12 large eggs
  • 1 cup milk
  • 1 ½ teaspoons salt
  • ½ teaspoon black pepper

Cheese

  • 1 ½ cups shredded pepper jack cheese, divided (½ cup for mixture, 1 cup for topping)


Instructions

  1. Prepare: Preheat your oven to 350°F. Grease a 9×13 inch baking dish with nonstick cooking spray to prevent sticking.
  2. Cook sausage: In a large skillet over medium heat, brown the ½ pound breakfast sausage until fully cooked, with no pink remaining. Add the 3 teaspoons minced garlic and cook for another minute to release flavors. Drain the cooked sausage on a paper towel-lined plate to remove excess grease.
  3. Beat eggs and mix: In a large bowl, beat together 12 eggs and 1 cup of milk until combined. Stir in the 2 cups of frozen potatoes O'Brien, 1 cup chopped spinach, ½ cup shredded pepper jack cheese, and the cooked sausage. Season with 1 ½ teaspoons salt and ½ teaspoon black pepper, mixing well to incorporate all ingredients.
  4. Bake: Pour the casserole mixture into the prepared baking dish, spreading evenly. Top with the remaining 1 cup shredded pepper jack cheese. Bake uncovered for 45 minutes, or until the eggs are set and the top is slightly golden brown. If the casserole starts to brown too much before the center is fully cooked, cover loosely with foil.
