- 1 tbsp ground cinnamon

Wet Ingredients
- 1 egg white
- 2 tsp water
- 2 tsp vanilla extract
Instructions
- Preheat Oven and Prepare Pan: Preheat your oven to 250°F (120°C) and line a baking sheet with parchment paper or non-stick foil to prevent sticking and for easy cleanup.
- Mix Sugar and Spices: In a large ziplock bag, combine the sugar, ground cinnamon, and salt. Seal the bag and shake to mix well.
- Whisk Wet Ingredients: In a large bowl, whisk together the egg white, vanilla extract, and water with a fork until the mixture becomes frothy and well combined.
- Coat Nuts: Add the pecans (and/or almonds) to the egg white mixture and stir well until the nuts are fully coated in the frothy mixture.
- Add Nuts to Sugar Mixture: Transfer the coated nuts into the ziplock bag with the cinnamon sugar. Seal the bag and shake thoroughly until all nuts are evenly coated with the cinnamon sugar mixture.
- Arrange on Baking Sheet: Spread the coated nuts evenly in a single layer on the prepared baking sheet. Make sure the nuts aren’t overlapping to allow for even baking.
- Bake and Stir: Bake the nuts in the preheated oven for 1 hour, stirring every 15 minutes to ensure they bake evenly and develop a crunchy coating without burning.
- Cool and Serve: Remove from the oven and allow the pecans to cool completely on the baking sheet; they will crisp up as they cool. Enjoy as a snack or party appetizer but try not to eat them all at once!
