Description

Learn how to make traditional Japanese miso soup at home with this simple, flavorful recipe. This nourishing soup features kombu and wakame seaweed, silken tofu, green onions, and white miso paste, ready in just 20 minutes.

Ingredients

Broth Base

  • 1 (3-inch) piece kombu
  • 4 cups water

Soup Ingredients

  • 3 tablespoons wakame dried seaweed
  • ¼ cup white miso paste
  • ⅓ cup chopped green onion
  • 6 ounces silken tofu, cubed
  • Tamari, to taste

Instructions

  1. Prepare Kombu Broth: Gently rinse the kombu piece to remove any impurities. Place it in a medium pot with 4 cups of water and gently simmer for 10 minutes. Avoid letting the water boil to prevent bitterness in the broth.
  2. Rehydrate Wakame: Soak the 3 tablespoons of dried wakame seaweed in a small bowl of warm water for at least 5 minutes until it rehydrates and softens.
  3. Incorporate Miso Paste: Remove the kombu from the pot. In a small bowl, mix the ¼ cup of white miso paste with some of the hot broth until smooth. Stir this miso mixture back into the pot to infuse the soup with rich umami flavor.
  4. Add Wakame, Tofu, and Green Onions: Drain the rehydrated wakame and add it to the soup along with the cubed 6 ounces of silken tofu and ⅓ cup chopped green onion. Simmer gently over very low heat for 1 to 2 minutes to warm ingredients without boiling.
  5. Season and Serve: Taste the soup and season with tamari to your preference. Serve hot for a comforting and authentic miso soup experience.

Notes

  • Do not boil the kombu broth as it can turn bitter.
  • Use silken tofu for a smooth texture that blends well in the soup.
  • Tamari is a gluten-free soy sauce alternative for seasoning.
  • Adjust miso paste quantity according to desired saltiness and flavor intensity.
  • This soup is best served fresh and not reheated multiple times.
