Socca Batter
- 1 cup chickpea flour
- 1 cup water
- 1¾ tablespoons extra-virgin olive oil, divided
- ½ teaspoon sea salt

- Preheat the Skillet: Preheat your oven to 475°F (246°C) and place a 10-inch cast-iron skillet inside to heat up thoroughly. This ensures the pan is hot enough to create a crispy socca.
- Prepare the Batter: In a medium bowl, whisk together the chickpea flour, water, 1 tablespoon of olive oil, and sea salt until you achieve a smooth, lump-free batter. Cover the bowl and let the batter rest for 30 minutes to allow the chickpea flour to absorb the liquid.
- Oil the Skillet: Using oven mitts, carefully remove the hot skillet from the oven. Add the remaining ¾ tablespoon of olive oil and brush it evenly over the bottom and sides of the skillet to prevent sticking and promote browning.
- Bake the Socca: Pour the rested batter into the hot skillet, spreading it evenly. Return the skillet to the oven and bake for 17 to 20 minutes until the socca is well browned and crisp around the edges. Avoid underbaking as the flatbread is best when crispy.
