Ingredients

Roasted Vegetables

  • 1 small sweet potato, cubed
  • 8 Yves Kale & Quinoa Bites

Chickpea Mixture

  • ¾ cup cooked chickpeas, drained and rinsed
  • 1 tablespoon extra-virgin olive oil
  • 1 tablespoon lemon juice (from 1 lemon)
  • ¼ teaspoon Dijon mustard
  • Pinch of sea salt and freshly ground black pepper

Kale Base

  • 8 to 10 lacinato kale leaves, chopped
  • ½ tablespoon lemon juice
  • Drizzle of extra-virgin olive oil
  • Pinch of sea salt and freshly ground black pepper

Toppings & Garnishes

  • 6 paper-thin slices from 1 Chioggia beet or watermelon radish
  • ½ avocado, diced (optional)
  • 1 tablespoon hemp seeds
  • Red pepper flakes (optional)
  • 2 tablespoons runny tahini (thin with warm water if necessary)
  • Sea salt and freshly ground black pepper, to taste
  • Lemon wedges, for serving


Instructions

  1. Roast Sweet Potatoes and Kale & Quinoa Bites: Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper. Toss the cubed sweet potatoes with a drizzle of olive oil and season with salt and pepper. Spread them on the baking sheet and roast for 25 minutes. After 12-13 minutes, add the 8 Yves Kale & Quinoa Bites to the baking sheet alongside the sweet potatoes to finish roasting together.
  2. Prepare Chickpea Mixture: In a small bowl, mix the cooked chickpeas with 1 tablespoon of olive oil, 1 tablespoon lemon juice, ¼ teaspoon Dijon mustard, and a pinch of salt and pepper. Stir well and set the mixture aside to marinate.
  3. Massage the Kale: Place the chopped lacinato kale in a large bowl. Drizzle with olive oil, ½ tablespoon lemon juice, and season with salt and pepper. Massage the kale leaves thoroughly with your hands until the leaves soften and become vibrant green, ensuring maximum flavor and tenderness.
  4. Assemble the Lunch Bowls: Distribute the massaged kale evenly into two large serving bowls. Top each with the marinated chickpeas, roasted sweet potatoes, and Yves Kale & Quinoa Bites. Add the paper-thin beet or radish slices and diced avocado, if using. Sprinkle with hemp seeds and red pepper flakes for a touch of heat, if desired.
  5. Add Tahini Dressing and Final Touches: Drizzle each bowl generously with runny tahini sauce, adding extra lemon juice if you like a tangier flavor. Season with additional sea salt and pepper to taste. Serve the bowls with lemon wedges for an extra burst of citrus on the side.
