Instructions
- Roast Sweet Potatoes and Kale & Quinoa Bites: Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper. Toss the cubed sweet potatoes with a drizzle of olive oil and season with salt and pepper. Spread them on the baking sheet and roast for 25 minutes. After 12-13 minutes, add the 8 Yves Kale & Quinoa Bites to the baking sheet alongside the sweet potatoes to finish roasting together.
- Prepare Chickpea Mixture: In a small bowl, mix the cooked chickpeas with 1 tablespoon of olive oil, 1 tablespoon lemon juice, ¼ teaspoon Dijon mustard, and a pinch of salt and pepper. Stir well and set the mixture aside to marinate.
- Massage the Kale: Place the chopped lacinato kale in a large bowl. Drizzle with olive oil, ½ tablespoon lemon juice, and season with salt and pepper. Massage the kale leaves thoroughly with your hands until the leaves soften and become vibrant green, ensuring maximum flavor and tenderness.
