Instructions
- Season the beef: Trim any fat from the sirloin beef tips as needed. Lightly season the beef tips with kosher salt and liberally with freshly ground black pepper to enhance the flavor.
- Brown the beef: Heat 1 tablespoon of olive oil in a large heavy-bottomed pot or Dutch oven over medium-high heat. Add the beef tips in batches, being careful not to overcrowd the pot, and sear until browned on all sides. Remove the browned beef to a plate or bowl and set aside.
- Cook the onions: Reduce the heat to medium and add the remaining 1 tablespoon of olive oil to the pot. Add the sliced onions and cook, stirring occasionally, until they become translucent and soft, about 5 to 7 minutes.
- Add liquids and seasonings: Stir in the beef broth or water, condensed French onion soup, Lipton onion soup mix, Worcestershire sauce, and bay leaf. Return the browned beef tips to the pot and bring the mixture to a boil.
- Simmer until tender: Cover the pot and reduce the heat to a simmer. Let the beef cook gently for 1 1/2 to 2 hours, or until the beef is fork-tender and the flavors meld.
- Thicken the gravy: In a small bowl, mix the cornstarch with 1/3 cup cold water until smooth. Stir this slurry into the pot and simmer for a few more minutes until the gravy thickens to your desired consistency.
