Ingredients
Fruit Mixture
- 1 1/2 cups strawberries, stems removed
- 1 cup plain or vanilla Greek yogurt
- 2 tablespoons honey
- 1/2 teaspoon vanilla extract
- Pinch of salt
Chocolate Coating
- 1 cup chocolate chips or melting chocolate
Instructions
- Blend Ingredients: In a blender or food processor, combine the strawberries, Greek yogurt, honey, vanilla extract, and a pinch of salt. Pulse the mixture until it is completely smooth and well blended.
- Form Strawberry Chips: Spoon the blended mixture onto a parchment-lined baking sheet or large plate in roughly 1 tablespoon portions. Keep in mind the mixture will spread slightly, so space them accordingly.
- Freeze the Chips: Carefully place the baking sheet in the freezer for 1 to 2 hours, or until the strawberry chips are fully frozen and firm to the touch.
- Melt Chocolate: Before removing the chips from the freezer, place the chocolate chips or melting chocolate in a small microwave-safe bowl. Microwave in 30-second increments, stirring in between, until the chocolate is completely melted and smooth. Allow it to cool slightly but remain fluid for dipping.
- Dip the Chips: Remove the frozen strawberry chips from the freezer and dip each chip into the melted chocolate to coat it. Place the chocolate-coated chips back onto the parchment-lined baking sheet.
- Set Chocolate: Return the baking sheet with the chocolate-dipped chips to the freezer until the chocolate is solid and set, which should take about 15-30 minutes.
- Store and Serve: Transfer the frozen strawberry chips to an airtight container and keep them frozen until ready to enjoy. Serve chilled directly from the freezer for a refreshing treat.
