Instructions

  2. Mix Dry Ingredients: In a large bowl, whisk together the flour, sugar, baking powder, baking soda, salt, and cinnamon until evenly combined.
  3. Combine Wet Ingredients: In another bowl, beat the eggs lightly then add the applesauce, yogurt, vegetable oil, and vanilla extract. Stir until smooth.
  4. Combine Wet and Dry Mixtures: Pour the wet ingredients into the dry ingredients and gently fold together until just combined. Avoid overmixing to keep the muffins tender.
  5. Add Fruit Cocktail: Carefully fold in the drained and chopped fruit cocktail, incorporating it evenly throughout the batter.
  6. Scoop Batter: Spoon the batter into the prepared muffin tin evenly, filling each cup about two-thirds full to allow room to rise.
