Ingredients

Whipped Cream

  • 2 cups heavy cream, cold
  • 2 tablespoons granulated sugar

Fruit

  • 1 to 2 lbs assorted fruit (strawberries, grapes, pineapple, kiwis, banana, or oranges), cored, peeled, rinsed, and thoroughly patted dry with paper towels

Bread

  • 8 slices soft white bread, crust trimmed


Instructions

  1. Whip the Cream: In a large bowl, combine the cold heavy cream and granulated sugar. Using an electric mixer or whisk, whip the cream until stiff peaks form. Transfer the whipped cream into a pastry bag or a zip-top plastic bag for easy piping.
  2. Prepare the Bread: On a clean cutting board, lay out some of the crust-trimmed bread slices in a way that you can easily work on one sandwich at a time.
  3. Pipe the First Layer of Cream: Pipe a generous layer of whipped cream evenly over each slice of bread. This acts as a creamy base to hold the fruits in place.
  4. Arrange the Fruit: Carefully place the prepared fruit diagonally across the bread slices with whipped cream, going from one corner to the other. This creates a beautiful diagonal fruit pattern inside the sandwich.
  5. Add the Second Layer of Cream: Pipe additional whipped cream over the fruit, making sure to completely cover the fruit layer. Keep the sandwiches oriented consistently to maintain alignment for cutting later.
  6. Cover with Bread: Gently press another slice of crust-trimmed bread on top to complete the sandwich.
  7. Wrap the Sandwiches: Individually wrap each sandwich tightly in plastic wrap. Using a marker, draw a diagonal line on the plastic wrap indicating the fruit layer’s direction for easy slicing guidance.
