Ingredients
Roasted Garlic
- 1 whole garlic bulb
- Extra virgin olive oil, for drizzling
- Sea salt, for sprinkling
Mashed Potatoes
- 2 pounds Yukon gold or butterball potatoes, peeled
- 2 teaspoons sea salt, divided
- ⅓ cup extra-virgin olive oil
- Freshly ground black pepper, to taste
- Butter, optional for serving
- Chopped chives and/or rosemary, optional for sprinkling
Instructions
- Preheat and prepare garlic: Preheat your oven to 350°F. Trim about ¼ inch off the top of the garlic bulb to expose the cloves, place it cut-side up on a piece of foil, drizzle with olive oil, and sprinkle with sea salt. Wrap tightly in the foil and roast for 40 to 60 minutes until the cloves are tender and golden brown. Let cool slightly, then mash the roasted garlic cloves into a paste using the back of a knife or a small masher. Set aside.
- Cook potatoes: Place the peeled potatoes and 1 teaspoon of sea salt in a large pot. Add enough water to cover the potatoes by about 1 inch. Bring the water to a boil and cook until the potatoes are fork-tender, approximately 20 minutes. Drain the potatoes, reserving 1 cup of the cooking liquid.
- Mash potatoes and combine flavors: Use a potato ricer or masher to mash the warm potatoes into a large bowl. Fold in the roasted garlic paste, ⅓ cup of extra virgin olive oil, ½ cup of the reserved cooking liquid, remaining 1 teaspoon of salt, and freshly ground black pepper to taste using a rubber spatula. Continue folding until the mixture is creamy, adding up to an additional ½ cup of cooking liquid if you prefer a softer texture.
- Serve and garnish: Serve the mashed potatoes hot. Optionally top with butter, chopped chives, and rosemary to enhance flavor and presentation.
