Ingredients

  • 1/2 cup kalamata olives, pitted and sliced
  • 1/4 cup red onion, thinly sliced
  • 2 cups mixed greens or baby spinach

For the Tzatziki Sauce

  • 1 cup Greek yogurt
  • 1/2 cup grated cucumber, excess water squeezed out
  • 2 cloves garlic, minced
  • 1 tbsp fresh dill, chopped
  • 1 tbsp lemon juice
  • Salt and pepper to taste


Instructions

  1. Prepare the Meatballs: In a large mixing bowl, combine ground beef or lamb with breadcrumbs, Parmesan, chopped onion, minced garlic, egg, parsley, oregano, cumin, salt, and pepper. Mix everything gently until just combined to avoid tough meatballs.
  2. Form and Cook the Meatballs: Shape the mixture into 1 to 1.5-inch diameter meatballs. Heat a large skillet over medium heat with a tablespoon of olive oil and brown the meatballs on all sides, about 5-7 minutes. Once browned, reduce heat, cover, and cook through for an additional 8-10 minutes, turning occasionally. Alternatively, bake at 375°F (190°C) for 20-25 minutes until cooked through.
  3. Make the Tzatziki Sauce: In a small bowl, combine Greek yogurt, grated cucumber, minced garlic, fresh dill, lemon juice, salt, and pepper. Mix well and refrigerate until serving to let flavors meld.
  4. Assemble the Bowls: Divide cooked rice or quinoa among serving bowls. Top each with a handful of mixed greens, cherry tomatoes, cucumber, kalamata olives, and red onion. Place meatballs on top and drizzle with tzatziki sauce. Garnish with extra parsley or dill if desired.
