- 1 cup fresh parsley
- 1 cup mixed soft leafy herbs (dill, mint, tarragon, and/or cilantro)
- 2 tablespoons chopped chives
- 2 tablespoons fresh lemon juice
- ½ teaspoon lemon zest
- 1 tablespoon extra-virgin olive oil
- 2 teaspoons capers
- 1 garlic clove
- ¼ teaspoon sea salt
- Freshly ground black pepper, to taste
Instructions
- Prepare Ingredients: Gather all fresh herbs, yogurt, lemon juice and zest, olive oil, capers, garlic, salt, and pepper to ensure a smooth assembly process.
- Combine in Food Processor: Place the Greek yogurt, parsley, mixed herbs, chopped chives, lemon juice, lemon zest, olive oil, capers, garlic clove, sea salt, and freshly ground black pepper into a food processor.

- For a vegan variation, substitute Greek yogurt with cashew cream made by blending soaked cashews with water until smooth.
- If you prefer a thinner dressing, add a small amount of water or olive oil gradually while blending.
- This dressing keeps well refrigerated for up to five days; always store in an airtight container.
