Description

This easy Green Goddess Dressing is creamy, bright, and delicious, featuring a blend of fresh herbs, Greek yogurt, and zesty lemon. Perfect as a dip or a salad dressing, it offers a fresh, tangy flavor with a smooth texture. A vegan variation using cashew cream is also possible.

Ingredients

Green Goddess Dressing Ingredients

  • 1 cup whole milk Greek yogurt*
  • 1 cup fresh parsley
  • 1 cup mixed soft leafy herbs (dill, mint, tarragon, and/or cilantro)
  • 2 tablespoons chopped chives
  • 2 tablespoons fresh lemon juice
  • ½ teaspoon lemon zest
  • 1 tablespoon extra-virgin olive oil
  • 2 teaspoons capers
  • 1 garlic clove
  • ¼ teaspoon sea salt
  • Freshly ground black pepper, to taste

Instructions

  1. Prepare Ingredients: Gather all fresh herbs, yogurt, lemon juice and zest, olive oil, capers, garlic, salt, and pepper to ensure a smooth assembly process.
  2. Combine in Food Processor: Place the Greek yogurt, parsley, mixed herbs, chopped chives, lemon juice, lemon zest, olive oil, capers, garlic clove, sea salt, and freshly ground black pepper into a food processor.
  3. Pulse to Blend: Pulse the mixture until it is well combined and smooth. This should yield a creamy, bright green dressing with an even consistency.
  4. Adjust Seasoning: Taste the dressing and season further with salt and pepper if needed to enhance the flavor.
  5. Serve or Store: Use immediately as a dip or toss it with salad greens. Alternatively, store the dressing in an airtight container in the fridge for up to 5 days to maintain freshness.

Notes

  • For a vegan variation, substitute Greek yogurt with cashew cream made by blending soaked cashews with water until smooth.
  • If you prefer a thinner dressing, add a small amount of water or olive oil gradually while blending.
  • This dressing keeps well refrigerated for up to five days; always store in an airtight container.
  • Fresh herbs can be adjusted according to availability or preference.
