Description

This Grilled Ratatouille Tartines recipe combines the smoky flavors of charred zucchini, eggplant, red bell pepper, and scallions with fresh cherry tomatoes, garlic, and herbs, all served atop toasted bread spread with creamy goat cheese or hummus. It's a vibrant and healthy open-faced sandwich perfect for a light lunch or appetizer.

Ingredients

Vegetables

  • 1 zucchini, sliced in half lengthwise
  • 1 medium eggplant, sliced into ¼-inch thick rounds
  • 1 red bell pepper, halved, ribs and seeds removed
  • 3 whole scallions
  • 1 cup halved cherry tomatoes
  • 1 garlic clove, minced

Seasonings and Herbs

  • Extra-virgin olive oil, for drizzling
  • Sea salt, to taste
  • 1 teaspoon sherry vinegar
  • 1 teaspoon herbs de Provence
  • ¼ cup chopped fresh basil

Serving

  • 8 slices of good bread, toasted
  • Hummus or goat cheese, for spreading

Instructions

  1. Preheat the grill: Heat a grill or grill pan over medium heat to prepare for grilling the vegetables.
  2. Prepare vegetables for grilling: Drizzle the zucchini, eggplant, red bell pepper, and scallions with olive oil and sprinkle a few pinches of sea salt over them to season.
  3. Grill the vegetables: Place the prepared vegetables on the grill and cook until they develop char marks and are tender, about 3 minutes per side.
  4. Chop grilled vegetables: Remove the vegetables from the grill and allow them to cool slightly. Then chop all the grilled vegetables into roughly 1-inch pieces.
  5. Toss the ratatouille mixture: In a mixing bowl, combine the chopped grilled vegetables with halved cherry tomatoes, minced garlic, sherry vinegar, herbs de Provence, and chopped fresh basil. Toss gently to mix well.
  6. Season to taste: Adjust seasoning by adding more sea salt if needed, ensuring flavors are balanced.
  7. Assemble tartines: Spread a generous layer of hummus or goat cheese over toasted slices of bread, then spoon the ratatouille mixture on top.
  8. Serve and enjoy: Serve the grilled ratatouille tartines immediately while the bread is still slightly warm and enjoy as a light meal or appetizer.

Notes

  • You can substitute goat cheese with any soft cheese of your choice or keep it vegan by using only hummus.
  • For added flavor, consider topping with a drizzle of balsamic glaze before serving.
  • These tartines can be served warm or at room temperature.
  • Use rustic or sourdough bread for the best texture and flavor.
