Description

These grilled tomatoes are tender, juicy, and intensely flavorful, making them a perfect summer side dish. They are quickly grilled to develop lovely char marks and a smoky depth, then finished with a drizzle of Italian dressing, fresh basil, and optional Parmesan cheese for an elegant and simple accompaniment to any meal.

Ingredients

Tomatoes and Seasoning

  • 6 firm roma tomatoes
  • Sea salt, to taste
  • Freshly ground black pepper, to taste

For Grilling

  • Extra-virgin olive oil, for drizzling and brushing

For Serving

  • Italian dressing, for drizzling
  • Freshly grated Parmesan cheese or vegan Parmesan, optional, for topping
  • Fresh basil leaves, for garnish

Instructions

  1. Prepare Tomatoes: Slice the roma tomatoes in half lengthwise to create two equal pieces, exposing the juicy interiors. Drizzle the cut sides generously with extra-virgin olive oil, then season with sea salt and freshly ground black pepper to enhance their natural flavors.
  2. Preheat Grill: Heat a grill or grill pan over medium-high heat to ensure it is sufficiently hot for grilling. Lightly brush the grill surface with olive oil to prevent sticking and to promote good grill marks on the tomatoes.
  3. Grill Tomatoes: Place the tomatoes cut side down onto the preheated grill. Grill for 4 to 6 minutes until prominent grill marks form and the tomatoes start to soften. Carefully flip the tomatoes over and grill on the skin side for an additional 3 to 4 minutes until they are tender but still maintain their shape without collapsing.
  4. Finish and Serve: Transfer the grilled tomatoes to a serving platter. Season lightly again with sea salt and freshly ground black pepper for balanced seasoning. Drizzle the tomatoes with Italian dressing to add a zesty and tangy element. If desired, sprinkle freshly grated Parmesan or vegan Parmesan over the top. Garnish with fresh basil leaves for color and aromatic freshness. Serve warm as a delightful summer side dish.

Notes

  • Use firm roma tomatoes as they hold shape well during grilling and have concentrated flavor.
  • You can substitute Italian dressing with balsamic vinegar and olive oil for a different but complementary flavor.
  • To make this recipe vegan, omit the Parmesan or use a vegan Parmesan alternative.
  • Serve immediately for the best texture, or refrigerate and serve chilled as a salad variation.
  • Grilling times may vary depending on your grill; watch carefully to avoid overcooking.
