- 2 eggs, room temperature

- 2 tablespoons whole milk

Instructions
- Preheat Oven: Preheat your oven to 350˚F (175˚C). Grease and line a 9”x5” loaf pan with parchment paper for easy removal.
- Mix Dry Ingredients: In a medium bowl, combine the all-purpose flour, baking soda, salt, ground cinnamon, pumpkin pie spice, and ground ginger. Stir these together and set aside.
- Combine Wet Ingredients: In a large mixing bowl, whisk together the vegetable oil, eggs, granulated sugar, brown sugar, pumpkin purée, and whole milk until the mixture is uniform in color.
- Add Shredded Fruits and Vegetables: Fold in the shredded apple or pear, shredded carrots, and chopped walnuts into the wet ingredients, mixing gently.
- Combine Wet and Dry Mixtures: Gradually add the dry ingredient mixture to the wet ingredients. Stir gently until just combined; be careful not to overmix to keep the bread tender.
- Pour and Bake: Pour the batter into the prepared loaf pan. Bake for 60-70 minutes. Halfway through baking, cover the top of the bread with foil to prevent over-browning.
- Check for Doneness: Test the bread by inserting a knife or toothpick into the center. It should come out moist but with no wet batter clinging to it.
- Cool and Serve: Allow the bread to cool slightly before removing from the pan. Serve warm or at room temperature, optionally with butter, apple butter, or cream cheese.
