Instructions
- Preheat Oven: Preheat your oven to 350°F (175°C) to get it ready for baking the muffins.
- Prepare Muffin Tin: Grease a nonstick muffin tin lightly with extra-virgin olive oil. Evenly distribute the diced red bell peppers and chopped scallions among the muffin cups to create a flavorful vegetable base.
- Mix Egg Batter: In a large bowl, whisk together the 9 large eggs until smooth. Add the grated garlic, sea salt, and several grinds of freshly ground black pepper. Sprinkle the all-purpose flour and baking powder on top, then whisk gently to combine. It’s fine if some small clumps of flour remain.
- Fill Muffin Cups: Pour the egg mixture evenly into each muffin cup, filling about a scant ¼ cup per cup over the peppers and scallions. This ensures each muffin is evenly portioned.
