Ingredients

For the Steaks:

  • 2 lb. ground beef, 80/20
  • 2 eggs, beaten
  • 1/3 cup plain breadcrumbs
  • 2 tablespoons Worcestershire sauce
  • 2 teaspoons granulated garlic powder
  • 1 1/2 teaspoons onion powder
  • 1 teaspoon seasoned salt
  • 1 teaspoon ground black pepper
  • 3 tablespoons avocado oil

For the Assembly:

  • 2 large white onions, cut into large slices
  • 3 tablespoons butter
  • 3 tablespoons flour
  • 3 cups beef stock
  • 1 teaspoon Worcestershire sauce
  • 1 tub instant mashed potatoes, heated according to package directions


Instructions

  1. Preheat equipment: Preheat a cast-iron pan over medium heat for 3 to 4 minutes and preheat the oven to 350° F (175° C).
  2. Mix steak ingredients: In a large mixing bowl, combine ground beef, beaten eggs, plain breadcrumbs, Worcestershire sauce, granulated garlic powder, onion powder, seasoned salt, and ground black pepper until thoroughly mixed.
  3. Shape patties: Divide the mixture into four equal portions and shape each into a 1.5-inch thick oval patty.
  4. Sear steaks: Add avocado oil to the preheated cast-iron pan. Cook two patties at a time for 3 to 4 minutes on each side until nicely browned but not fully cooked. Remove the par-cooked steaks to a tray and repeat with the remaining patties.
  5. Sear onions: Add the sliced onions to the same pan used for the steaks and sear them for 4 to 6 minutes until they soften and develop slight caramelization.
  6. Make jus: Stir in butter and flour into the pan with onions creating a roux, then gradually pour in the beef stock while stirring. Add 1 teaspoon Worcestershire sauce and season with black pepper to taste. Remove the pan from heat.
  7. Bake steaks: Nestle the seared steaks over the onions in the broth. Transfer the pan to the preheated oven and bake for 20 minutes or until the internal temperature reaches 150° F (65° C) measured with a meat thermometer.
  8. Serve: Remove the steaks from the pan and serve immediately with the onion jus spooned over. Accompany with creamy instant mashed potatoes prepared as per package instructions.
