This refreshing Heirloom Tomato Sandwich features a creamy white bean spread with a tangy lemon and caper kick, layered with fresh basil, butter lettuce, ripe heirloom tomatoes, and sliced avocado on toasted Seeduction® bread. Perfectly light and nutritious, it's an ideal choice for a summer picnic or a quick, satisfying main dish.


Ingredients

White Bean Puree:

  • 1 ½ cups cooked cannellini beans, drained and rinsed
  • 2 tablespoons extra-virgin olive oil
  • 2 garlic cloves
  • 3 tablespoons lemon juice
  • 1 teaspoon capers
  • Sea salt and freshly ground black pepper, to taste

For the Sandwiches:

  • 8 slices toasted WFM Seeduction® bread
  • 4 butter lettuce leaves
  • 3 heirloom tomatoes, sliced
  • 2 avocados, sliced
  • Sea salt and freshly ground black pepper, to taste
  • 8 fresh basil leaves
  • Pinch of smoked paprika (optional)
  • Sprinkle of hemp seeds (optional)


Instructions

  1. Prepare the White Bean Puree: In a blender, combine the cannellini beans, olive oil, garlic cloves, lemon juice, and capers. Puree until smooth. Season with sea salt and freshly ground black pepper to taste. Chill the mixture in the refrigerator until ready to assemble the sandwiches.
  2. Assemble the Sandwiches: Lay out the toasted Seeduction® bread slices. Spread a generous layer of the chilled white bean puree on each slice. Top with a butter lettuce leaf, followed by sliced heirloom tomatoes and avocado. Add fresh basil leaves, and season with sea salt, freshly ground black pepper, and optionally a pinch of smoked paprika and a sprinkle of hemp seeds. Place the second slice of bread on top to complete each sandwich.

  • To save time, you can prepare the white bean puree in advance and store it refrigerated for up to 2 days.
