Ingredients
Spread Ingredients
- 1 1/2 cups cooked cannellini beans, drained and rinsed
- 1/4 cup cilantro or parsley
- 1/4 cup mixed fresh herbs (dill, tarragon, mint, and/or chives)
- 2 tablespoons extra-virgin olive oil
- 3 tablespoons fresh lemon juice
- 1 tablespoon tahini
- 1 small garlic clove
- 1/2 teaspoon lemon zest
- 1/2 teaspoon sea salt, plus more to taste
- 1 to 3 tablespoons water, if needed
- Freshly ground black pepper, to taste
For Serving
- Lundberg Organic Brown Rice Thin Stackers
- Thinly sliced radishes
- Thinly sliced carrots
- Edamame
- Fresh herbs
- Crumbled feta cheese (optional)
Instructions
- Prepare the Spread: In a food processor, combine the cannellini beans, cilantro or parsley, mixed fresh herbs, extra-virgin olive oil, fresh lemon juice, tahini, garlic clove, lemon zest, sea salt, and several grinds of freshly ground black pepper. Pulse the mixture until it achieves a creamy texture.
- Adjust Consistency: If the spread is too thick, gradually add water, one tablespoon at a time, pulsing after each addition, until the desired creamy consistency is reached.
- Assemble the Snack: Spread a generous layer of the white bean mixture onto each Lundberg Organic Brown Rice Thin Stacker. Top with thinly sliced radishes, carrots, edamame, fresh herbs, and, if desired, a sprinkle of crumbled feta cheese for extra flavor and texture.
Notes
- For a nut-free version, ensure tahini is suitable or substitute with a nut-free alternative.
- If you prefer a smoother spread, process the beans longer until extra creamy.
- The spread can be made ahead and stored in the refrigerator for up to 3 days.
- Feel free to experiment with different herbs depending on your preference or seasonal availability.
- This spread pairs well with gluten-free crackers and fresh vegetables.
