Made using simple ingredients like oats, protein powder, and eggs, these waffles come together in minutes using a waffle iron. Perfect for making ahead and freezing, they reheat quickly in a toaster for a nutritious start to your day.
Ingredients
Dry Ingredients
- 1 cup old-fashioned rolled oats
- ½ cup all-purpose flour (70 g) (use gluten-free flour if needed)
- 2 servings protein powder of choice (60-70 g or about ¾ cup)
- 2 teaspoons baking powder
Wet Ingredients
- 4 eggs
- 1 ½ cups milk of choice (dairy-free if needed)
- 1 teaspoon pure vanilla extract
Instructions
- Preheat Waffle Iron: Preheat your waffle iron, whether a regular size or mini waffle maker, to ensure even cooking for your waffles.
- Blend Ingredients: Add all ingredients to a high-speed blender. Secure the lid and blend on low for 15-20 seconds until the mixture is well combined to form a smooth batter.
- Cook Waffles: Pour a small amount of batter into the preheated waffle iron—amount depends on your waffle iron size. Cook until waffles are lightly golden and cooked through. Remove waffles to a plate or keep warm in the oven set to the Keep Warm setting.
- Repeat Cooking: Continue cooking waffles until all the batter is used, making about 12 standard size waffles or 18 mini waffles.
- Serve: Serve warm with your favorite toppings and enjoy a high-protein breakfast treat.
Notes
- To freeze waffles, cool them completely at room temperature, then store in a freezer-safe bag or container for up to 3 months. Reheat in a toaster oven for quick and easy breakfasts.
- For gluten-free waffles, substitute all-purpose flour with an equal amount of gluten-free 1:1 baking flour blend.
- For dairy-free options, use a plant-based protein powder and unsweetened non-dairy milk like almond or oat milk.
- Desired protein powders include whey or plant-based options suitable to your dietary needs.
