Almond Butter

  • 3 cups raw almonds

Instructions

  1. Preheat and Toast Almonds: Preheat your oven to 350°F (175°C) and line a large baking sheet with parchment paper. Spread the raw almonds evenly on the baking sheet and toast them for 10 minutes or until they become fragrant and lightly browned. Once done, remove from the oven and let them cool slightly to avoid overheating the food processor.
  2. Process Almonds: Transfer the toasted almonds to a medium food processor. Begin processing the nuts, pulsing to break them down. The almonds will start to get chunky, then clump into a ball, and finally become creamy and smooth. Stop every 30 seconds to 1 minute to scrape down the sides of the bowl and rest the motor. This stage of achieving creamy almond butter takes approximately 15 minutes.
  3. Add Oil as Needed: If after 15 minutes the almond butter has not fully come together or is still too thick, add avocado oil by the teaspoon to help achieve a smoother consistency. Keep processing until the desired creaminess is reached.
  4. Season and Serve: Add sea salt to taste and give the almond butter a final quick blend to distribute the salt evenly. Serve your homemade almond butter on toast, mix into overnight oats, oatmeal, yogurt, or use as a spread for banana bread. Store leftovers in an airtight container.
